Making desserts has never been my forte, but since discovering raw desserts, I have become a little obsessed.
Raw desserts are quick, simple and usually pretty good for you.
This little recipe is a gem and takes about 15 minutes from start to finish.
2 x carrots grated
1 cup walnuts
1/2 cup of shredded coconut
1 cup of pitted dates (soak the dates in water to soften)
1/4 cup of organic coconut oil (you may need to melt)
Ground cinnamon (about 1tsp – but add extra to your taste)
Zest of half a lemon (or an orange or a lime would work)
Pinch of Sea Salt
Throw all the ingredients into your blender or food processor and whizz. Once formed into a chunky dough, divide mixture evenly into a muffin tray (I use a silicon muffin tray as they slide out easily). Pop your muffin tray into the fridge and leave overnight (or around 4-5 hours if you can’t wait that long).
